I can’t find tutorials or guides for how to add name tags or 3D text notes in your video renders.
Can somebody post few links, please?

That would have to be done in a video editing or compositing app, like Premiere or After Effects. Keyshot doesn’t have any text abilities other than to import 3d text created somewhere else.

So these text effects re not done in Keyshot??

Nope, that’s after effects or some other compositing program.

Now, that being said, they may have made those text boxes and in AE, then imported and applied to planes in keyshot as video textures. Thats how they got them to track with the rotation of the scooper thingy. But that could also be done in AE afterwards with camera tracking and 2.5D trickery.
